2012 Quetzal Cabernet Sauvignon (Cabernet Sauvignon)

AGEING: 12 months in French oak barrels, followed by 8 months in bottle.
DEVELOPMENT: The grapes are harvested by hand and transported in wooden crates. They are cooled to 15 °C temperature and pressed to obtain the must. fermentation is performed over a period of 8 to 10 days at controlled temperatures of 25 °C in large stainless steel barrels. During this process, it is performed, 4 or 5 pumps daily for 15 minutes.
PAIRING: Red meats, roasts, game meats, pasta with tomato-based sauces, aged cheeses.
