2012 Quetzal Cabernet Sauvignon (Cabernet Sauvignon)

TASTING NOTES:

  • View: deep garnet color with purple trim.
  • Nose: Intense aromas of red and black fruit with spicy tones, toasted wood and snuff.
  • Mouth: Round body, complex, dense with tannins. And spicy flavors of ripe red fruits. long, elegant finish.

APPELLATION: Alentejo.

VINEYARD: Quinta do Quetzal.

GRAPES: Cabernet Sauvignon.

AGEING: 12 months in French oak barrels, followed by 8 months in bottle.

DEVELOPMENT: The grapes are harvested by hand and transported in wooden crates. They are cooled to 15 °C temperature and pressed to obtain the must. fermentation is performed over a period of 8 to 10 days at controlled temperatures of 25 °C in large stainless steel barrels. During this process, it is performed, 4 or 5 pumps daily for 15 minutes.

PAIRING: Red meats, roasts, game meats, pasta with tomato-based sauces, aged cheeses.

TEMPERATURE: 16-18 °C
