Description · Caves São Domingos

São Domingos Reserva Semi Dry (Arinto, Bical and Malvasia Fina)


  • View: citrus and limpid yellow.
  • Nose: floral bouquet, lime, some peach, tropical and excellent minerality.

VINEYARD: clayey soil. Gently tempered by the closeness of the ocean.

GRAPES: Arinto (50%), Bical (40%) and Malvasia-Fina (10%).

AGEING: aged 16 months on yeast at a constant temperature of 12 °C, removed from yeasts for 2 months. Disgorging releases the yeast and then adding a small amount of liquor issue to complete the wine.

PREPARATION: grapes harvested by separate varieties. After inoculation with selected yeasts, fermentation in stainless steel tanks, in November enology team prepares the wine base with individual characteristics of aromas and flavors. Second fermentation in the bottle.

PAIRING: dessert cakes, ice cream or fruit.

São Domingos Reserva Semi Dry

- Winemaking: After the second fermentation in bottle the wine is aged in cellars on the yeast for a period of 16 months at a constant temperature of 12°C and thus find the perfect balance of wealth, taste and elegance. For removal of yeast proceeds to the remuage for 2 months. The disgorging glacée releases the yeast and then add a small amount of expedition liqueur to finish the wine. After a period of two months after this whole process a bottle of sparkling wine is ready to enter the market. We advise you not to delay their consumption more than 10 months after your purchase.
- Grape Varieties: Arinto, Bical, Malvasia Fina.
- Food Pairing: Pleasing to the palate when served at dessert with pies, ice cream or fruit.
- Store and Serve Advices: It should be served at 6-8ºC.
