Barolo Chinato is a fine dessert wine that derives directly from the ancient Piedmontese tradition.
The wine is produced with barolo grapes 100% pure DOCG to which is added a secret recipe of herbs among which are known aromatization with calissaja cinchona bark, rhubarb root and gentian and the precious cardamom seed).
The history of this wine is linked to the lively wine reality of Langa. Since the late nineteenth century. Starring Dr. Serralunga Chaplain and Dr. Zabaldano of Monforte, who were able to apply, each according to its own formula, the much vaunted property of cinchona Barolo, creating an elixir from the immediate commercial fame and fortune by enduring in the rural culture of the region. After gaining some market interest, Barolo Chinato knows the indifference of the decades following the Second World War, just in correspondence with the crisis of peasant cultural models. Ceretto it understood the importance and is one of the protagonists of his revival in the late 80s.
The winery Ceretto formula involves the use of a Barolo DOCG which is added herbs, a dozen, carefully selected, and cinchona infused separately with alcohol.
Features of this Ceretto Barolo Chinato
The color is garnet red with orange highlights. The intense and enveloping. The taste is the absolute result and the continuous succession of flavors that ends with a pleasantly bitter notes perfectly balanced sugar.
The bowed Barolo should be served in small tulip glasses at room temperature. It can be used as a digestive, but also as an aperitif, with ice and soda water.
It 'also a good mulled wine if offered hot with lemon zest, very appreciated as a dessert wine, to be enjoyed with dry pastries, but especially with desserts made with chocolate.
