AGING: 24 months in Slavonian oak barrels and central France. Next bottle aging, never less than 12 months.

PREPARATION: Fermentation in stainless steel vats, with a duration of 10-12 days at a controlled temperature of 30-31 ° C. Then the must remains on the skins for a few days.

The nobility of the name of Fontanafredda - historical company acquired in mid-800 by the King Vittorio Emanuele II - is the greatest expression through the equally noble Barolo. Entirely composed of Nebbiolo, this Barolo is fermented in steel and then aged in large Slavonian oak barrels for a time of at least 2 years. Other 12 months - minimum - in bottles, make it ready to make its entry into the market. The dried rose, spices, notes of underbrush and the fascinating background of licorice determine the nose, the varietal identity of this "wine of kings". The palate shows a full body and rich in structure but, at the same time, played on the fineness of a polished tannin. It lends itself to accompany important dishes, such as a fillet with mushrooms or, to stay on the local gastronomic typicality, a fondue enriched with truffle shavings.

Red colour with purplish hints. Mellow cedar wood aromas. This Fontanafredda had a smooth and oily texture.
I recommend to pair it with appetizers.
I drank this Fontanafredda Barolo once with my coworkers.

The Fontanafredda Barolo is the ideal wine to pair it with wild boar sausages. I tried it on a tasting course.
Red base colour with violet hints. Fantastic berry aromas. As I'm not really a fan of red wine, I noticed a plane taste on the palate.
