2005 Dominio de Tares Cepas Viejas (Mencía)
The name Cepas Viejas (Old Vines) describes the origin and age of this wine.
60 vineyards growing on terraces and slopes with gravel soils and iron board. These characteristics, soil and planted strains therein, means a naturally occurring loads of 4000 kg per hectare. The fruit from these vineyards has a skin-pulp very favorable for obtaining high quality wines relationship (very thick flesh and low water content in the pulp).
For the production of this wine was selected the best fruit at a point of maturity that will give us a good phenolic concentration without losing lively acidity, which, in turn, provide a freshness to the final wine.
The harvest of these payments begins around September 15 and after selection in the vineyard to the winery comes in boxes of 15 kg. Here again is manually classified in the selection table.
We conducted a total stripping and started three weeks maceration by pumping where we extract all the aromatic and flavor possible potential.
Finally it is placed in French oak barrels (Allier and Nevers) and American (Missouri and Virginia), 1 to 2 years of use, where it will malolactic fermentation and aging
for 9 months.
