Cava is a Spanish sparkling wine that is made using the same basic process as the French champagne. It should not be surprising, therefore, that cava holds a special place in the Spanish culture, both on special occasions and around the holidays. The word "cava" itself is Spanish for either cave or cellar. As these were the locations where the cava was traditionally stored during ageing, it is not surprising that the name stuck.
As a type of product which carries a denomination of origin, only certain regions in Spain are allowed to produce true cavas and only those which are made following the traditional method are allowed to call themselves cava. The rest must all be nothing more than sparkling wines. Conde de Caralt Brut Nature is a cava from the D.O. Cava. As a traditional product of Spain, this sparkling wine is made by Conde de Caralt especially for the palates of today.
Made using Xarel·lo, Viura, Parellada, and Macabeo grapes, this straw-yellow sparkling wine has beautiful reflections of green and gold. The bubbles are abundant while the taste is complex. This unpretentious cava is perfect to combine with Mediterranean dishes, rice entrees, and creamy cheeses. There is always something waiting for celebration, make sure that you have a bottle of this cava on hand to celebrate properly!

Conde de Caralt Brut Nature (Macabeo, Parellada and Xarel·lo)
- View: Conde de Caralt Brut Nature is a refreshing pale yellow, with green glints, large bubbles, and a satisfyingly substantial mousse.
- Nose: Refreshing orchard garden aromas of apple, grapefruit, grass, and lime, with delicate floral and watermelon notes.
- Mouth: Very dry, fruity, and beautifully balanced, the very exemplar of a sparkling wine. Truly effervescent and fresh without excessive sweetness, and with a tangerine finish leaving a satisfyingly subtle bitter aftertaste.
VINEYARD: Conde de Caralt, founded in Spain by José Maria de Caralt Borrell, Comte of Caralt, in the 1960s. The estate continues to be family-owned and run to this day.
GRAPES: Macabeo 60%, Parellada 30%, Xarel-lo 10%
PREPARATION: Crafted in the traditional cava fashion, produced as it is in the Penedès region of Catalonia. As with Champagne, it is fermented in the bottle, rather than in vats as is the process for Prosecco.
PAIRING: A perfect aperitif on its own, Conde de Caralt Brut Nature is also lovely served with appetisers; cured meats; light fish dishes; shellfish; soft cheeses; and as part of any celebratory event. You might enjoy it with Quinoa-Crusted Cod with Plum Chutney, accompanied by Chunky Chips and Mushy Minted Peas, dressed with a sprinkle of sea salt and a drizzle of lemon juice.
