Maria Casanovas Glaç Brut Nature

Pale yellow with green trim. The nose is intense, notes of white fruit and candied quince, pastries, fine aniseed and elegant smoky notes. The palate is a young cava, very fresh; elegant and complex, large and balanced, well integrated carbonic, dry and long.
Cava striking and original, with a unique blend of Macabeo, Xarel·lo and Parellada varieties predominant grape variety Pinot Noir. The vinified in white brings finesse and subtle aromas of white flowers with citrus notes.
He is a young, elegant and complex cava.
Maria Casanovas excels in the art of blending, mixing different varieties of wine, which forms the starting point for still wine will end up becoming an exceptional cava. For this reason we follow the "champenoise" method consisting of subjecting the quiet to a second fermentation by adding sugar and ferments in a sealed bottle wine. This ferementación must be slow and at a constant temperature between 12 and 14º C, basic parameters which ensure formation and detachment of fine bubbles as characteristics of good cava. The process takes between two and five years depending on the type of cava. During this period, in the case of medium-aged, yeasts act as transmitters of the primary aromas of the grape itself. For long aging, autolysis - deep interaction of yeasts with wine - brings intense and complex flavors: roasted, milk, ripe fruit. . . . all exciting.
Aged for a period of 18 months.
