2016 La Motte Chablis 1er Cru Vau-Ligneau
- View: pale yellow, clear and bright.
- Nose: elegant, airy, subtle, balanced.
- Mouth: Very good minerality, flexibility, very delicately.
APPELLATION: Chablis 1er Cru.
VINEYARD: kimmeridgianos soils exposed to the south-southeast compounds of deep white clay.
GRAPES: 100% Chardonnay
AGEING: Aged for 11 months in oak barrels (30%).
PREPARATION: pneumatic pressing, alcoholic fermentation in stainless steel tanks with thermoregulation system approximately 15 days, 5 weeks of malolactic fermentation in oak barrels.
WINE PAIRING: frog legs, Saint-Jacques skewers grilled tuna tartare, parsley ham.
