2018 Chablis Jean Paul & Benoit Droin Blanc (Chardonnay)

TASTING NOTES:

  • View: gold, green and fresh reflections.
  • Nose: generous and lively with hints of lemon, oyster shell and flint.
  • Mouth: good volume, good stuff and good ending.

APPELLATION: Chablis.VINEYARD: generally shallow soils. Subsoil between gray marl and limestone beds, sometimes very rich in fossils of Exogyra virgula, a small oyster-shaped characteristic point of the middle and upper kimmeridgianas marl.GRAPES: Chardonnay.

AGING assembly after 8 to 10 months. Collage if necessary, light filtration and bottling.PREPARATION: pneumatic pressing. Sedimentation enzyme 12 to 24 at 15 °C, then native yeast fermentation in stainless steel tanks. systematically making malolactic fermentation.

The Droin family is perhaps the oldest of Chablis. He works in this part of Burgundy for over five centuries. On 6 May 1866 the Emperor Napoleon III, on a visit to Auxerre, he received from Jean Baptiste Droin some bottles of his wine. To thank Napoleon III sent him a silver Tastevin with engraved symbols of the Empire, the subject is still in possession of the family. Currently, the property covers 24 hectares with 8 climats Premier Crus and 5 Grands Crus.
