Unos antiguos y espectaculares lagares de piedra construidos en el s.XII son los responsables de la fermentación de este vino, una antiquísima práctica que ha recuperado Raül Bobet en un gran trabajo de arqueología. La fermentación en estos antiguos lagares es un proceso único, que requiere de gran esfuerzo pero que ofrece un resultado espectacular, dotando a Quest de un frescor y de una originalidad difícilmente igualable.

El vino recibe una fermentación maloláctica en barrica. La mezcla de Cabernet Sauvignon, Petit Verdot y Merlot nos hace pensar directamente en los vinos de Bordeaux, y es que Quest replica un estilo elegante, más sutil que potente, sedoso pero fresco, que ganará en complejidad en botella.
