The final process of distillation of the Gin Sea, which has its roots in Galicia, takes place in one of the oldest European copper stills, a distiller of the year 1890. It was developed by the Chef Manuel Barrientos, creator and founder of "El Cielo" restaurant. He combined first-rate English grain with ten botanicals (juniper berries, cardamom, coriander, thyme, bitter chamomile, liquorice, peppermint, lemon, sweet orange and bitter orange) to achieve this intense and complex gin.
