The harvest is manual allowing a first selection of grapes on the vine, then they are brought to the cellar in boxes of 50 kg. A second sorting is performed on a table, then the grapes are de-stemmed, crushed and cooled to a pre-fermentation maceration. The wine is similar to that made on our Chateauneuf-du-Pape: no yeast addition, temperature control during alcoholic fermentation and daily pumping. The bottling takes place usually 1 year after harvest. Work done in order to keep the fruit and the enjoyment of wine. The wine is in concrete tank, a little barrel but no new wood. Our Lirac is composed of Grenache, Syrah, Mourvèdre Our wines, over the years, and our knowledge of the region, have gained in finesse and elegance.
