2015 Château Simone (Grenache, Mourvedre, Monastrell, Syrah, Garnacha negra and Cinsault)

TASTING NOTES:

  • View: dark pink.
  • Nose: Aromatic notes of ripe red fruits with a spicy touch and aroma and mineral salt
  • Mouth: fresh and pleasant flavor, density on the palate and a spicy finish with a saline touch.

APPELLATION: Provence.

VINEYARD: Simone Castle.

GRAPES: Grenache, Mourvedre, Cinsault, Syrah, Castet Manosquin, Carignan, Muscat.

AGEING: This wine rests on its lees for 6 months.

PREPARATION: The mixture is gently pressed grapes and macerated in a tank for 10 hours at temperatures of 16 °C. Then the must is fermented in stainless steel tanks with use of natural yeasts and partially cold temperatures. The wine rests on its lees for 6 months, then cold stabilized and bottled unfiltered.

PAIRING: Fresh salads, appetizers, stir fry vegetables, mushrooms, white meat, red meat, cold cuts, pasta red sauces, risottos, paellas, blue fish.

I drank before the main meal, with starters and snacks. A red to drink with that special person.
Red colour followed by reddish brown. I would highlight the aromas of tobacco. Quite sweet.

- Mouth: complex bouquet, tannic, highly structured, rich, deep, good stuff.

AGEING: 24 months in stainless steel tanks, 12 months in oak barrels.
PREPARATION: traditional without chemical fertilizer and respectful treatment of ecological balance.

Strong scents of coffee and toffee. This Château Simone seemed fairly fresh.
I found this 2013 fine and plesant.
