Winemaking: The grapes come from 12 different districts of the island characterized by unique microclimates that determine different ripening times. The harvest begins after August 15 with grapes destined for withering nature that occurs in the sun and wind and lasts 20-30 days.
In September the grapes are harvested, the less precocious, and work fresh: they cool to preserve the aromas and then are pressed gently to get the juice. At the fermenting wort is added - on several occasions - raisins sgrappolata hand. This is a delicate phase of maceration during which the raisins releases its extraordinary heritage of persuasive sweetness, freshness and special aroma. Then the wine is aged in tanks at least 7 months and 12 months in bottle.

Light gold in colour, with bronze glints and heady perfumes of apricot and raisin. On the palate it is mellow and rounded, with a delicious dried fig and honey character which seems to express the essence of Pantelleria, an island of sun and wind. Long and creamy on the finish.

Passito di Pantelleria Ben Rye of the prestigious Sicilian Donnafugata winery is an excellent dessert wine, the result of fermentation of grape Zibibbo grapes. The most famous Passito beyond the confines of the beautiful country, bringing with it a very meaningful name, Ben Rye in Arabic means 'daughter of the wind', attributed by name to the island of Pantelleria, a magnificent land bathed by the Mediterranean and windy. The Ben Rye is a very special dessert wine, becoming the example par excellence of the Passito di Pantelleria. The grapes that gives life to this wine comes from 11 districts on the island, each is characterized by its particular microclimate, the same which helps to produce Zibibbo grapes with unique characteristics. To realize the Passito di Pantelleria Ben Rye, after the harvest of August the grapes are dried naturally on the racks, then in September, the less precocious, is held the second collection. In the must obtained from grapes of the latter harvest the dried grapes are immersed, following the fermentation which lasts until November, after which the wine is aged for 7 months in steel tanks, after which it is bottled. However, before even being marketed mature in the bottle for a year. The result is a Passito with great longevity, soft and smooth, aromatic sweet wine that has won several awards, including that of Vitae AIS Guide.

The vineyards grow on the beautiful terraces in Pantelleria and plants placed inside of a basin to protect them from salt carried by the wind. The harvest begins after August 15 with Grapes intended to dehydrate under the sun and the wind for about 20-30 days. The harvest continue during the month of September with the grapes that has to be processed fresh. These grapes are then pressed and the must is fermented in stainless steel tanks and added of dehydrated grapes that will give up to the fermenting must an extraordinary legacy of sweetness and aroma. The wine at the end of the fermentation age for 7 months in steel and 12 in bottle before release.
