From the perspective of climatology, 2016 as we lived in Pauillac can be divided into two time :, - first, a winter and extremely humid spring: the first four months of the year had already received more than half of the annual rainfall, with a notable record of at least 240mm from January ;, - then a summer and a very dry autumn without significant rainfall, leading to a défécitaire water balance at the end of year.,, consequence of this summer drought, if the grape berries were numerous, they, however, remained small, leading density and concentration of flavors.,, the lovely temperatures of August and September have enabled achieve a slow but excellent ripeness, so the harvest could begin 26/09 with the Merlot and continued in perfect conditions until 14/10.,, in terms of fermentations, each plot, each room eu grapes were, as usual, vinified separately, to express the most vivid characteristics.,, The now assembled wines have remarkable color, intense aromas of fruit and spice, and a dense texture made of tannins rich and coated.,, 2016, by its density and its flesh may thus be compared to the greatest vintages of the XXI century.

To drink in good company.
Red Bordeaux tone. Aromas of raisins. The taste reminded me to coffee.
I think the best pairing would be with meat.
