2003 Domaine de Chevalier (Cabernet Sauvignon, Cabernet Franc, Petit Verdot and Merlot)

Domaine de Chevalier 2003 (60 % Cabernet Sauvignon, 30 % Merlot, 5 % Cabernet Franc, 5 % Petit Verdot.)

A subtle and yet rather exotic character to the nose here, with a peppery quality. There is finesse here; this has an elegant style on the palate, with just a creamy edge to it. There are firm, rather masculine tannins although quite well knitted into the structure of the wine. Very firm, appealing style which has been really well assembled. Lots of potential here.

Domaine de Chevalier 2003

An evolved, complex bouquet of black currants, forest floor, smoked herbs, and sweet cherries as well as currants emerges from the 2003. It displays supple tannin, medium to full body, beautiful purity, and a classic, elegant finish.

Domaine de Chevalier 2003

Scarlet red, with garnet rim. With good coat, well coated and glossy. Franco, intense and complex. Aromas of wild fruits, notes of oak, spices, snuff, a sweet memory "plum-cake", vegetable and mineral nuances complete the aromatic panel. Soft attack, with polished tannins, at the optimum time for consumption. Taste to the family of wild berries, step by easy, pleasant, enveloping palate and long memories.
Pairing: Dishes taste power media not to cover the entire structure or taste of the wine. Soft meats like rabbit stew casserole, stewed, ratatouille vegetables.

I didn't pair it with anything. A client gave it to me.
Opaque red. Noticeable aromas of cherry and licorice. Caramel flavour.
