- View: creamy and toasted Variety.
- Nose: Aromas of nectarine, pear, peach, spring wildflowers along with light notes of brioche.
- Mouth: Displays a full, rich palate with lush golden fruit, stone fruit and good acidity that leads to a smooth finish.
APPELLATION: Sonoma County, California.
AGING: 12 months in new French oak barrels to 20%.
PREPARATION: whole bunches are pressed for phenolic delicacy. The native yeast and native malolactic fermentation takes place in barrel complete with bâtonnage south. After aging 12 months in 20% new French oak barrels (François Frères, Taransaud Beaune, Demptos and Cadus), this Chardonnay was traditionally fined for clarity during the next harvest and bottling without filtration.
WINE PAIRING: Perfect for dishes with salads, rice, white and red meats.
RIGHT SERVING TEMPERATURE: 10-12 ° C
A select group of winemakers can be credited with revolutionizing modern day winemaking in California. They are the innovators who, some 20 years ago, brought Old World traditions back to a New World that had thrown in its lot with university scientists to make squeaky clean wines largely devoid of character. The goal of these new wave winemakers was to put terroir back into the bottle and create wines of unique distinction.More about the Winery
