Château Ausone Saint Emilion 2004

The wines of Chateau Ausone are very powerful for a Saint Emilion. They generally require cellarning for at least 10 years to reach maturity and will often improve until 20 years from the year of the harvest. In thier youth, these wines can be very tannic. As they age, the flavors of currant, raspberry and black cherry begin to come forward along with hints of spice. Some of the library wines that are nearly a century old still possess charm and a surprising youthfulness.

I bought it on a website I can not remember.
Cherry, middle layer. Strong aromas of pipe tobacco. On the palate was quite thick.

Sant Emilion Château Ausone 2004

Cherry colour, as they all are. To emphasize on this  the smell of coffee. It reminded me of black plums.
I drank before eating, with starters and snacks.
I opened the bottle with my best friend.

Tasting Notes: Production and Processing: There are 2 000 cases of Chateau Ausone produced each year, on average. The fermentation takes 21 to 35 days. Aging is always 100% new barrels each year. The wines are aged in barrels for at least 18 months (and sometimes almost two years, depending on the crop) before bottling. During the period of barrel aging, the wine is moved from barrel barrel (inserted) to remove sediment every 3 months. The wines are usually very well (clarified) with egg white, but left not filtered before bottling. The castle has extensive limestone caves on the property.

With the influence of Michel Rolland since 1995, the wines have begun to show a lot more fruit and extract thier youth. It remains to be seen how this will affect the aging that has been the hallmark of the wines of Ausone.

History: Chateau Ausone is a very old property with medieval historical significance. In its more recent history, the wines of the castle suffered from lower quality and diminished in the mid-20th century Ausone reputation began to return to its historical greatness positon with hiring Delbeck in 1970. Pascal was in charge Delbeck the start Ausone 1976 vintage. Since 1995, no longer plays a role in making wine, but remained in charge of the vineyards.

The property had belonged for generations by an association of Dubois-Challon Vauthier family and the family. In mid-1990, the Vauthier family won exclusive property of Chateau Ausone. Alain Vauthier controls all aspects of winemaking. It began with winemaker Michel Rolland as consultant begins with the 1995 harvest.

Shelf life of between 15-50 years.
The wines of Château Ausone, some would still call the wines of the poet, achieved after long years of aging, a significant difference on all neighboring vineyards.

Toffee smell, followed by coffee smell. It has a good entry.

Chateau Ausone 2015
In a restaurant.
Subtle taste. Its aromas reminded me of white rose petals. If you like acidic wines, this one might be right for you. I loved its acidity.

A red which I enjoyed with my friends.
The reddish brown edges were not very nice. Definitely the wrong colour, although it was an acceptable wine. Strong strawberries aromas. Very light, pleasent.
Best paired with other food than the one we ordered.

A good smell of flowers, mostly purple colour. I liked the Château Ausone, but it tasted a bit rough.
This 2014 has a phenomenal QPR.
