AGING: Long-lived wine, several years in the cellar.
PREPARATION: For the preparation of this wine, after the harvest the grapes are exposed to the sun and left to dry. After reaching an alcohol content of 11, 12 °, alcohol is added. Thus a "fortified" wine is obtained which is poured into 500 liter American oak barrels, where it begins to age for at least 6 years, with constant racking, according to the "solera" method. The winery's climate favors the perfect oxidation of the wine that transforms Osborne Pedro Ximenez 1827 into a delicious sherry.
