2017 Cloe Rosado
TASTING NOTES OF 2017 Cloe Rosado:
- View: pink, salmon pink and purple, clean and bright.
- Nose: aromas of white flowers, red berries and citrus aromas of wild roses.
- Mouth: great balance, fresh and very elegant entrance, keeping the acidity and persistence the end of the palate, hints of rose petals.
APPELLATION: Sierras de Málaga.
PROCESSING: direct to reduce the increase of color, temperature control, alcoholic at low temperatures selected for 11 days until the complete transformation of the yeast fermentation sugars bleeding. Start of malolactic fermentation, but still ends to maintain acidity.
PAIRING: sushi, tuna, thin shells, oysters, fish baked in salt.
TEMPERATURE: 8-10 °C
