VINEYARD: Monte Baixo. The vineyards are located in the demarcated Vinho Verde region in northwest Portugal. This area is bounded on the north by the Minho river and extends along the coast to the city of Porto. The climate has an Atlantic influence, which take precedence cool temperatures and abundant rainfall. Homogeneous soils are mostly granite, fertile and high acidity. The geographical position of this region allows the production of excellent white wines.
GRAPES: 50% Loureiro, 50% Trajadura
PREPARATION: The harvest is done manually, followed by stemming and crushing grapes. The wort is clarified by static decanting at a controlled temperature of 16 ° C and the alcoholic fermentation is conducted at a temperature of 18ºC to 20ºC. Before bottling the wine is filtered twice to ensure maximum expressiveness.
WINE PAIRING: Ideal as an aperitif and to accompany fish, seafood, white meats, tapas, sushi, sashimi, salads and pecorino.
