2008 Volnay Santenots Joseph Drouhin

- Nose: Intense aromas of ripe fruit with spicy tones of chocolate and toasted wood.
- Mouth: Silky Body, complete, structured, fresh with elegant tannins and intense flavors of ripe fruit. persistent and fresh finish.
VINEYARD: Maison Joseph Drouhin.
GRAPES: Pinot Noir.
AGEING: 14 to 18 months in French oak barrels.
PREPARATION: The grapes are subjected to a process of partial stripping, followed by gentle pressing to obtain the must. maceration takes place in contact with the skins at controlled temperatures of 10 to 15 °C, for a period of 48 hours. Fermentation takes place at controlled temperatures of 20 to 24 °C, for a period of 20 to 25 days. During this process, natural yeasts are added to stabilize the wine. The wine is aged in oak barrels for a period of 14 to 18 months. Finally, the wine is bottled.
PAIRING: Red meats, roasts, tapas, sausages, game meat, poultry, cream of mushroom and tomato, white pasta, mature and aged cheeses.
RECOMMENDED SERVING TEMPERATURE: 16-18 °C
With its 73 hectares (182.5 acres), the Joseph Drouhin Domaine is one of the largest estates in the region. It owns vineyards in all of Burgundy: Chablis (38 hectares - 95 acres), Côte de Nuits and Côte de Beaune, (32 hectares - 80 acres), Côte Chalonnaise (3 hectares - 7.5 acres). It is comprised of a majority of Premier and Grand Crus, planted with the two Burgundian grape varietals, pinot noir and chardonnay.More about the Winery
